Black wheat is a gluten free cereal which is rich in vitamin B, protein, dietary fibre and other nutrients like phosphorus, potassium, calcium, magnesium, manganese, selenium and copper. The polysaccharide and protein content of Black wheat seeds are higher than that found in common wheat. Black wheat is supposed to have highest anthocyanin content among all colored lines, has around 60% more iron. Anthocyanins are antioxidants which removes free radicals from the body before they are able to react with the cellular components and alter their function or structure.
Gharat (Watermil) - Traditional way of making atta.
Gharats were once a major medium for grinding wheat, in mountain villages. The flour from water-powered mill was not only nutritious but also tasty. The Gharats, which add sweetness to the mountain culture and social fabric there, are now less visible. Gharat i.e. the mill in the mountain grinds wheat with the help of water and not electricity. In a small hut-like room covered with stones at the bottom of the mountain, when a strong stream of water coming from the drain hits the upper part of the manual set-up, the stone mill starts rotating at high speed to grind wheat. People take turns grinding their wheat and leaving some part of the flour there as flour. That part of the dough goes to the person who takes care of the house.

Stone-ground (Gharat / watermill) flours are nutritionally better as compared to milled one because they contain both the germ and bran- the parts that hold real flavor.
Unlike steel rolling where rollers heat up the flour & kills most of the vitamins; stone milled flour is more nutritious because in the grinding process the flour stays cool. The high temperatures of rolling also cause the oils in the grain to turn rancid so flour created using a roller will spoil faster than stone milled flour.
It is a proven fact that traditional milling is the only way to ensure flour has real flavour, integrity, and nutritional value. This is due to the fact that the whole grain is ground in a single pass between two horizontal, round millstones, thus retaining and integrating the wheat germ oil.
To put it simply with stone-ground flour nothing is added or taken away, whole grain in and whole grain flour comes out.
